Slice into 1–1.5 cm thick pieces and brush with a little oil. Pan-fry over medium heat for 1–2 minutes per side until golden brown or briefly sear on the grill. Alternatively, heat in the oven at 150 °C (top/bottom heat) for about 14 minutes. Tastes great on its own, with baked potatoes and salad, in bowls, sandwiches, or finely sliced with pasta. For extra freshness, finish with lemon juice and a splash of olive oil.

Warm Winter Veggie Seitan Salad

Try the seitan steak in a lukewarm roasted vegetable salad – perfect for the cold season yet still light. Cut seasonal oven vegetables such as carrots, parsnips, pumpkin cubes, red onions and bell peppers into pieces, place everything on a tray with some olive oil, salt, pepper and rosemary, and roast until slightly caramelised. While the vegetables finish roasting, slice the seitan steak into 1–1.5 cm thick pieces and fry them in a little oil until golden brown on each side. Then cut the steaks into strips, mix with the lukewarm vegetables in a large bowl and finish with fresh parsley or rocket, a squeeze of lemon juice and a drizzle of olive oil.
