How it works:
Preheat the oven to 200 °C top/bottom heat. Cut a mix of vegetables (e.g. carrots, potatoes, bell peppers, courgettes, broccoli) into bite-sized pieces and place them on a baking tray lined with baking paper. Mix 2–3 tablespoons of olive oil with 1–2 teaspoons of your chosen spice blend and drizzle over the vegetables. Toss well so everything is lightly coated. Spread out on the tray and bake for about 25–35 minutes until the vegetables are tender and lightly browned.
Tip:
For extra flavour, sprinkle a small pinch of the spice blend over the vegetables after baking and finish with some fresh parsley or chives. A simple yoghurt or quark dip seasoned with the same mix goes perfectly with it – a quick, flavourful and lighter evening meal with minimal effort.
