Before preparation, rinse the buckwheat thoroughly in a sieve. Then bring to the boil at a 1:2 ratio (buckwheat: water or vegetable broth), reduce the heat and simmer gently for about 15 minutes. Remove from the heat, let stand for 5 minutes and fluff with a fork. For salads and bowls, let it steam off briefly so it stays loose and grainy; optionally toast the groats briefly without fat beforehand.

Note: Enjoy as part of a varied and balanced diet. When sprouting, maintain hygiene and consume sprouted groats promptly and chilled.

Hearty Buckwheat Mushroom Skillet

Try a cosy autumn-winter buckwheat and mushroom skillet: cook the buckwheat as recommended in vegetable broth and let it steam off well so the grains stay nice and fluffy. In a large pan, sauté onions, garlic and mixed mushrooms (for example button and king oyster mushrooms) in a little olive oil until they start to brown. Then fold in the pre-cooked buckwheat, toast briefly and season with fresh parsley, a splash of lemon juice, salt and pepper. For extra creaminess, stir in a spoonful of cream cheese or plant-based cream. In just a few minutes you have a warming, satisfying dish that is also perfect for meal prep for work – simply reheat briefly in a pan or oven the next day and it almost tastes even better.
