When baking, replace about 1/5 to 1/4 of the cereal flour with coconut flour and add a little more liquid – this keeps the dough nice and fluffy. To thicken sauces, curries or smoothies, stir in 1 tablespoon and let it sit briefly – this provides natural binding and a gently nutty-sweet note. For extra fluffiness, use 1 teaspoon of baking powder per 200 g total flour. Always mix coconut flour in thoroughly, as it is very absorbent. Ideal for pancakes, muffins, bread, bowls and more.
Note: Do not use 1:1 as a replacement for wheat flour. Coconut flour requires more liquid. Consume as part of a varied, balanced diet.

On colder days, try a warm coconut apple crumble from the oven: For the topping, mix 3 tablespoons coconut flour, 3 tablespoons rolled oats and 3 tablespoons ground nuts with 2–3 tablespoons melted coconut oil or butter, a little maple syrup and a pinch of cinnamon. Slice apples, toss with a bit of lemon juice, cinnamon and 1 teaspoon of coconut flour – this binds the juice so the crumble doesn’t turn watery. Put everything in a small baking dish, sprinkle the crumble on top and bake at about 180 °C for 20–25 minutes. Serve warm with some yogurt or vanilla ice cream – simple to make, wonderfully aromatic and a great way to use your coconut flour in everyday baking.
