For a simple yet impressive winter aperitif, you can turn these lentil chips into a warm snack platter in just a few minutes: spread the chips loosely on a baking tray and dot some of them with a mild hummus or a yogurt-based dip. Add a few thin slices of cherry tomato or bell pepper and a sprinkle of fresh herbs such as parsley or chives. Place the tray in the preheated oven for only 3–4 minutes at low temperature, just long enough to gently warm the chips and soften the dips slightly – they should not brown.
