Bring a large pot of water to a boil and add about 1 tsp of salt per litre. Add the ravioli to gently simmering, not rolling-boiling, water and let cook/steep for 12–15 minutes until al dente. Stir gently from time to time. Drain, do not rinse, and serve immediately with sauce, pesto or a little olive oil and fresh herbs.
