Heat 1–2 tsp ghee in a pan and fry vegetables, eggs, fish, meat or tofu over medium to high heat until golden brown. When baking, replace butter or oil 1:1 with ghee for a delicate, nutty note. Finish bowls, curries and stews with a dollop of ghee or spread it straight on warm bread. Also ideal for sautéing potatoes, rice and vegetables—for rounded roasted aromas and a fine buttery melt.

Golden Ghee Roast Vegetables

Use the ghee on cooler days for an easy roasted vegetable tray that almost cooks itself: Cut root vegetables like carrots, parsnips, beetroot or sweet potatoes plus onions and a few garlic cloves into chunky pieces. Place everything in a baking dish, add 2–3 tsp of ghee per tray and rub it evenly over the vegetables with your hands until they are lightly coated and glossy. Season with salt, pepper and herbs such as rosemary or thyme, then roast at about 190–200 °C until the vegetables are soft on the inside and nicely browned on the edges. Finally – straight out of the oven while still hot – add a small extra dollop of ghee on top: it will melt directly over the vegetables, boost the nutty butter flavour and create fuller roasted aromas. Perfect as a simple side to fish, meat or tofu – or on its own with some coarse salt and fresh herbs as a warming dinner.
