Bring plenty of water to a simmer with about 1 tsp of salt per litre (e.g., 2.5 litres). Add the tortelloni and let them gently cook at a low simmer for 12–15 minutes until al dente and they rise to the surface. Drain, toss with olive oil or vegan sage butter as desired and serve immediately. Tastes great classic with tomato sauce, pan-fried with sage, baked as a casserole, or cold as a pasta salad with pesto, sun-dried tomatoes and pine nuts. As a main course, plan about 125 g per person.
