For baking, cooking and finishing: Replace 20–50% of the flour with ground almonds depending on the recipe – for a moist crumb and fine nut aroma. Lightly toast in a pan and use as a topping for bowls, yogurt or porridge. Mix into pesto, coatings or vegan patties to add structure and juiciness to doughs. Also ideal as a binder in desserts or for creamy smoothies. After opening, seal airtight and use promptly.

Warm Apple–Almond Crumble
Use the ground almonds to make a juicy warm apple–almond crumble from the oven – perfect for the colder season. Slice 3–4 apples, mix them with a little lemon juice, cinnamon and a spoonful of maple syrup or honey, then place them in a baking dish. For the crumble topping, combine ground almonds, some rolled oats, a bit of flour (or more almonds for a gluten-free version), a hint of cinnamon, a little sugar and cold butter or plant margarine until you get crumbly pieces. Generously sprinkle this over the apples and bake until the surface is golden brown and the smell of roasted almonds fills the room. Serve the crumble warm with a spoonful of yoghurt, vanilla ice cream or cream. Thanks to the almonds, the crumble becomes especially aromatic, nutty and wonderfully moist – ideal when you want to treat guests or simply spoil yourself.
