Place 1 part couscous in a bowl and pour over 1 part boiling water or broth. Cover and let swell for 3–5 minutes, then fluff with a fork. Refine to taste with olive oil, herbs, vegetables or lemon juice. Enjoy warm as a side or cold as a salad. For extra aroma, briefly toast the couscous in a dry pan beforehand.

Warm Winter Couscous with Veggies
Try using the couscous as a warm winter couscous with roasted vegetables: cut seasonal vegetables such as pumpkin, carrots, parsnips and red onions into pieces, mix them with a little olive oil, salt, pepper, garlic and rosemary or thyme, and roast in the oven until soft and lightly browned at the edges. Meanwhile, prepare the couscous according to the recommendation – instead of water you can use a light vegetable broth for extra flavour. Fluff it up with a fork, mix in a splash of olive oil and a bit of lemon juice, then spoon the hot roasted vegetables on top. If you like, finish with fresh parsley and a handful of roughly chopped nuts or seeds. This way you create a complete, satisfying winter meal in just a few minutes that also works perfectly as a take-away lunch for the office.
