Bring a large pot of water to a boil and add about 1 tsp of salt per liter. Add the ravioli to gently simmering (not vigorously boiling) water and let them cook for 12–15 minutes until al dente, stirring carefully from time to time. Drain, do not rinse, and serve immediately with sauce, pesto or a little olive oil and fresh herbs.
Note: Do not consume raw; heat thoroughly before eating.

Creamy one-pan ravioli – perfect when you want something quick but still seriously tasty.
How to do it:
Cook the ravioli according to the instructions until al dente. Meanwhile, heat a little olive oil in a pan, gently sauté a finely chopped shallot and a small clove of garlic. Add 6–8 halved cherry tomatoes and let them simmer briefly. Deglaze with a splash of plant-based cream or barista drink, season lightly with salt and pepper.
Transfer the cooked ravioli directly from the pot into the pan, fold in carefully and let them sit in the sauce for 1–2 minutes. Finally, top with fresh rocket and chopped herbs (e.g. basil or parsley) and finish with some freshly ground pepper.
Tip:
If you do not rinse the ravioli after cooking, the sauce will cling better to the dough and the vegan, cheese-like filling becomes especially creamy – ideal as a relaxed weeknight dinner.
