For baking, you can replace part of the butter – e.g. 60 g coconut oil plus 2–3 tbsp water instead of 100 g butter – for a fine, lightly sweet note. Stir a spoonful into warm dishes like curries, porridge or hot cocoa for a creamy texture. For cold recipes, briefly liquefy the closed jar in a warm water bath, stir and dose precisely. Golden Coconut Pancakes with Berries
How to:
Whisk together 1 egg (or egg substitute), 120 ml milk or plant drink, 80 g flour, 1 tsp baking powder and a pinch of salt until smooth. Heat 1–2 tsp coconut oil in a non-stick pan over medium heat. Add small portions of batter and cook the pancakes on both sides until golden.
To serve:
Stack the pancakes on a plate, drizzle a little melted coconut oil on top and garnish with fresh berries or slightly thawed frozen berries and some maple syrup or honey.
Tip:
If you gently melt the coconut oil in a warm water bath beforehand, you can dose it precisely and get evenly browned pancakes with a fine but not overpowering coconut note – perfect for a relaxed breakfast or brunch in a small group.
