Place 1 part couscous in a bowl and pour over 1 part boiling water or stock. Cover and let swell for 3–5 minutes, then fluff with a fork. Season to taste with olive oil, herbs, vegetables or lemon juice. Enjoy warm as a side or cold as a salad. For extra aroma, lightly toast the couscous in a dry pan beforehand.

Warm lemon vegetable couscous for a relaxed evening
How to:
Use about 60–80 g couscous per person. Optionally toast it in a dry pan for 2–3 minutes to intensify the aroma, then place it in a bowl and pour the same amount of boiling hot vegetable stock over it. Cover and let it sit for 5 minutes. Meanwhile, dice seasonal vegetables such as carrots, leek and bell pepper, sauté them in a little olive oil and season with salt, pepper and lemon juice.
Fluff the couscous with a fork, fold in the warm vegetables and finish with fresh parsley, a drizzle of olive oil and, if you like, some feta or chickpeas for extra protein.
Tip:
Cook a double batch and fill the remaining couscous into a lunch box. This way you have a balanced, satisfying lunch ready for the next day – you only need to reheat it briefly or enjoy it cold as a salad.
