Before cooking, rinse the buckwheat thoroughly in a sieve. Then bring to a boil at a ratio of 1:2 (buckwheat: water or vegetable broth), reduce the heat and simmer gently for about 15 minutes. Remove from the heat, let sit for 5 minutes and fluff with a fork. For salads and bowls, let the steam escape briefly – this keeps it nice and separate; optionally toast the groats briefly in a dry pan beforehand.

Note: Enjoy as part of a varied, balanced diet. When sprouting, observe hygiene and consume sprouted groats promptly and chilled.

Roasted Veggie Buckwheat Bowl

Warm buckwheat and roasted vegetable bowl for cosy evenings

How to:
Cook the buckwheat according to the preparation instructions in water or light vegetable stock and let it steam off briefly so it stays nice and fluffy. In the meantime, prepare oven vegetables (e.g. carrots, parsnips, onions, bell peppers or pumpkin, depending on the season): mix with a little oil, salt, pepper and herbs and roast in the oven until soft and lightly browned. Place the buckwheat in a bowl, add the roasted vegetables on top and finish with a spoonful of hummus or some yoghurt, fresh herbs and a few seeds or nuts.

Tip:
If you cook a larger amount of buckwheat in advance, you have a versatile base in the fridge for several days. This way you can quickly put together new bowls – simply combine with whatever vegetables you have on hand.
