How to:
Cook some couscous, bulgur or rice according to the instructions and let it steam off briefly. In the meantime, reheat falafel (homemade or from the chiller) in the oven until they are nicely golden on the outside. Arrange fresh salad, cucumber, cherry tomatoes and some red cabbage or carrot strips in a bowl.
For the dressing, mix plain yogurt or a plant-based alternative with a little lemon juice, salt, pepper and garlic if you like. Add the warm grains to the bowl, place the falafel on top and drizzle generously with the yogurt dressing.
Finally, roughly crush your sea salt lentil crisps by hand and sprinkle them over the bowl right before serving. This keeps them extra crunchy and adds a hearty note to your dinner.
Tip:
If you add the lentil crisps only at the very end, you get a great mix of warm falafel, lukewarm grains, fresh vegetables and super crispy topping – ideal for an easy, light evening meal after a long day.
