When baking, replace about 1/5 to 1/4 of the cereal flour with coconut flour and add a little more liquid — this keeps the dough nicely light. To thicken sauces, curries or smoothies, stir in 1 tablespoon and let it sit briefly — this provides natural binding and a subtly nutty‑sweet note. For extra fluffiness, use 1 teaspoon of baking powder per 200 g total flour. Always mix coconut flour in well, as it is very absorbent. Perfect for pancakes, muffins, bread, bowls and more.
Note: Do not use 1:1 as a substitute for wheat flour. Coconut flour requires more liquid. Consume as part of a varied and balanced diet.

How to:
Whisk 2 eggs with 120 ml milk or plant drink, add 1 tbsp oil and, in a separate bowl, mix 40 g coconut flour with 20 g oats, 1 tsp baking powder and a pinch of salt. Gradually stir the flour mixture into the liquid, let the batter rest for 5 minutes and adjust the consistency with a little extra liquid if needed – the batter should be thick but pourable.
Cook small pancakes over medium heat in a well-preheated non-stick pan with a little oil or clarified butter, turning them until both sides are golden brown. This keeps them moist inside with a nicely browned outside.
Tip:
