Heat 1–2 tsp ghee in a pan and sauté vegetables, eggs, fish, meat or tofu over medium to high heat until golden. For baking, replace butter or oil 1:1 with ghee for a delicate, nutty note. Finish bowls, curries and stews with a dollop of ghee or spread it straight onto warm bread. Also ideal for searing potatoes, rice and vegetables – for rounded roasted aromas and a fine buttery melt.

How to:
Cook 3–4 waxy potatoes with the skin on until just tender, let them steam off briefly and cut into slices. Heat 1–2 tablespoons of ghee in a large frying pan over medium to higher heat and place the potato slices in a single layer. Fry without moving too much until the underside is nicely golden, then carefully turn and fry until crisp and browned all over. Season with salt, pepper and chopped parsley or chives.
Tip:
For a complete, quick evening meal, first sauté sliced onions and a few vegetable cubes (e.g. carrots or peppers) in the same ghee, then add the potatoes and finish frying everything together. This way you get a hearty, uncomplicated one-pan dish with a fine, nutty-buttery flavour – ideal after a long day.
