Bring plenty of water with approx. 1 tsp salt per litre (e.g., 2.5 litres) to a boil. Add the tortelloni and let them gently simmer for 12–15 minutes until they are al dente and float to the surface. Drain, toss with olive oil or vegan sage butter and serve immediately. Delicious classic with tomato sauce, pan-fried with sage, as a bake or cold as a pasta salad with pesto, sun-dried tomatoes and pine nuts. As a main course, plan about 125 g per person.

How to:
Cook the tortelloni as recommended in plenty of salted water until al dente. In a large pan, heat a little olive oil and gently sauté a finely chopped shallot and a clove of garlic until translucent. Add 150 ml plant-based cooking cream (e.g. soy or oat), bring to a brief simmer and season with salt, pepper and a small splash of lemon juice. Fold in a big handful of fresh spinach or rocket until just wilted. Add the drained tortelloni straight to the pan and gently toss everything together.
Tip:
Served with toasted pine nuts or sunflower seeds and some freshly ground pepper, you get a warming vegan pasta dish in just a few minutes – perfect after a long day when you want something quick that still feels like a cosy, home-cooked evening meal.
