Simmer ravioli gently in plenty of lightly salted water (approx. 1 tsp salt per litre) for 12–15 minutes until al dente. Drain carefully and enjoy straight away—classic with tomato sauce, with pesto or tossed in a little olive oil or sage butter. We recommend approx. 125 g uncooked per person (equals about 225 g prepared). For extra bite and roasted notes, briefly pan-sear the ravioli after cooking.

How to do it:
Cook the ravioli in lightly salted water until al dente and drain well. Heat some olive oil with a small piece of butter in a large pan. Add the cooked ravioli together with a handful of halved cherry tomatoes and fry everything over medium heat until the ravioli are lightly golden and crisp on the outside.
Finally, add finely chopped garlic, a few leaves of fresh basil and a splash of the pasta cooking water or a little white wine to create a light, silky sauce. Finish with freshly ground pepper and some grated hard cheese.
Serving suggestion:
Serve the ravioli in a deep plate, garnish with extra basil and a little lemon zest. This gives you an uncomplicated, aromatic dinner that feels warming yet pleasantly light – perfect for cooler spring evenings.
