Stir well before use. For pasta, add 1–2 tbsp (approx. 30 g) to hot, freshly drained pasta and stir in 2–3 tbsp of pasta cooking water until creamy. Also enjoy cold as a topping for salads, bowls or roasted vegetables, or as a spread on bread. For a quick dip, mix with some yogurt or a plant-based alternative. After opening, cover the surface with a little oil and keep refrigerated.

Here is our favourite shortcut for a quick, cosy dinner on chilly days: turn the pesto verde into a creamy roasted-vegetable pasta in just 5 minutes. Roast seasonal vegetables such as diced pumpkin, carrots, parsnips or broccoli with a little olive oil, salt and pepper, and cook your favourite pasta al dente, keeping some of the cooking water. Mix 1–2 tbsp of pesto with a little hot pasta water directly in the still-warm pan until you get a smooth, silky sauce, then fold in the pasta and roasted vegetables. Finish with a handful of toasted nuts or seeds (for example walnuts or sunflower seeds) on top – and you have an easy vegan soul food dish that looks like you spent much more time on it than you actually did.
