For baking, cooking and finishing: Depending on the recipe, replace 20–50% of the flour with ground almonds — for a moist crumb and a fine nut aroma. Lightly toast them in a pan and use as a topping for bowls, yogurt or porridge. Mix into pesto, coatings or vegan patties to add structure and juiciness to doughs. Also ideal as a binder in desserts or for creamy smoothies. After opening, seal airtight and consume soon.

Moist Almond-Apple Muffins
Moist almond-apple muffins without much effort – perfect when you want something sweet that still fits easily into everyday life.
How to:
Preheat the oven to 180 °C top/bottom heat. Whisk 2 eggs with 2–3 tablespoons honey or maple syrup and 100 ml milk (or plant drink). Add 80 g flour, 80 g natural ground almonds, 1 tsp baking powder and a pinch of salt, then stir into a smooth batter. Dice a small apple finely and fold it in. Fill the batter into muffin liners and bake for about 18–20 minutes until lightly golden.
Tip:
Lightly toast 1–2 tablespoons of ground almonds in a pan without oil and sprinkle them over the warm muffins right after baking. This brings out a particularly intense nutty aroma and keeps the inside nicely moist – ideal with an afternoon coffee or as an uncomplicated dessert to bring along.
