Hearty, crunchy pumpkin seed topping idea for warm roasted vegetable bowls:

How to:
Preheat the oven to 200 °C top/bottom heat. Cut seasonal vegetables such as carrots, parsnips, celery, beetroot or pumpkin into pieces, mix with a little olive oil, salt, pepper and optional fresh herbs and roast on a tray for about 25–30 minutes until the vegetables are golden and tender.

Meanwhile, toast 2–3 tablespoons of the roasted, salted pumpkin seeds in a non-stick pan without extra fat for 2–3 minutes over medium heat until fragrant. Let them cool briefly and chop some roughly, leaving the rest whole.

Arrange the roasted vegetables in a bowl, add a spoonful of hummus, plain yogurt or skyr and sprinkle the whole and chopped pumpkin seeds generously on top. Finish with a little lemon juice or a drizzle of cold-pressed oil if you like.
