Mediterranean Roasted Vegetables with Green Olive Spread
How to:
Preheat the oven to 200 °C top/bottom heat. Cut seasonal vegetables such as carrots, potatoes or sweet potatoes, onions, bell peppers and zucchini into bite-sized pieces. Mix everything with a little olive oil, salt, pepper and optionally fresh herbs like rosemary or thyme. Spread the vegetables on a baking tray and roast for about 25–30 minutes until lightly browned on the outside and tender on the inside.
Remove the tray from the oven and add 2–3 tablespoons of the green olive spread in small dollops directly on the hot vegetables. Let it soften briefly, then gently toss so that the spread turns into a savoury, creamy coating around the vegetables.
