How to:
Preheat the oven and cut seasonal vegetables such as carrots, parsnips, Brussels sprouts, potatoes or pumpkin into large chunks. Toss with a little olive oil, salt, pepper and fresh herbs (for example rosemary, thyme) and spread on a baking tray. Roast until the vegetables are slightly crisp on the outside and soft on the inside.
