Pan-fry over medium heat for 1–2 minutes per side in a little oil until golden on the outside and hot inside. In the oven, warm at 140 °C for approx. 10 minutes. On the grill, sear briefly over direct heat, then finish over indirect heat. Serve in a bun with fresh crunch and creamy vegan sauce – or enjoy as a protein boost in a bowl.

Fresh tofu-wakame burger
Vegan tofu-wakame burger with crisp spring vegetables and fresh lime cream
How to:
Pan-fry the patties in a little oil until they are golden on the outside and hot inside. In the meantime, lightly toast a soft burger bun. For fresh crunch, slice a few radishes very thinly, shave a small cucumber lengthwise into thin strips and prepare a few tender leaves of lettuce.
For the lime cream, mix vegan mayo or a plant-based yogurt with a little lime juice, a pinch of salt and freshly ground pepper. Optionally, stir in some finely chopped chives or spring onion.
Now build the burger: spread the bottom half of the bun with the lime cream, add lettuce, cucumber and radish, place the hot tofu-wakame patty on top and, if you like, finish with a few drops of soy sauce or a sprinkle of sesame seeds. Add a bit more cream on top and close with the bun.
Tip:
Prepare 2–3 extra patties, let them cool and store them in an airtight container in the fridge. This way you have a quick plant-based dinner ready for the next one to two days – also perfect to turn into a colourful bowl with rice, edamame and vegetables.
