How to:
Cook your favourite pasta in well-salted water until al dente. Before draining, reserve a cup of the cooking water. Place 2–3 tablespoons of red pesto in a large pan or bowl and whisk in 3–4 tablespoons of hot pasta water until you get a smooth, silky sauce. Add the hot pasta straight in and toss thoroughly so everything is evenly coated.
