Use the red pesto as a quick, warm roast-vegetable sauce for a cosy late-autumn or winter evening: cut seasonal vegetables such as pumpkin, carrots, parsnips, onions and peppers into chunks, toss with a little olive oil, salt and pepper and roast for about 25–30 minutes. While the vegetables are in the oven, mix 2–3 tablespoons of the pesto with a small ladle of hot water (or pasta water if you serve a few noodles on the side) until you get a velvety, pourable sauce. Arrange the roasted vegetables on a plate, drizzle the still-warm pesto sauce over the top and finish with fresh basil or parsley and a handful of toasted seeds or nuts.
